Big ass ingredient list:
• 1 big ass pot. Crab pot or similar. All work is done in this pot. No a 4 quart pot won’t work.
• 1/2 cup olive oil
• 4 med – large onions
• 2 lbs sweet italian sausage
• 8.5 lbs ground beef (I used a mix of 80/20 and 85/15)
• 32oz of beef broth (low fat/fat free)
• 4 * 28oz cans of plum tomatoes (italian/basil)
• 2 * 12oz cans of tomato paste
• 1 fresh jalapeno or equivalent (or use some cayenne, who am I to judge?)
• 1 tablespoon onion powder
• 3 cloves of garlic
• 4.5oz plain chili powder
• 1 bay leaf
• 2 tablespoons salt (not much, red cooking wine provides a lot)
• 2 tablespoons oregano
• 1 cup red cooking wine
• 1oz light chili mexican chili powder (yes it has to be mexican damn it)
• 3oz cuminseed
• 1.5 tablespoons black pepper
• 1 tablespoon whitepepper
• (?) cayenne pepper (?) (see below)
• 2pk sazon goya
• 3 tablespoons brown sugar
• 1/4 cup fresh dill chopped
• 1/4 cup fresh parsley
• 1 * 16oz can of dark kidney beans drained
• 1 * 16oz can of black beans drained
• 1/4 cup lemon juice
Directions:
Prepping for the drops:
1. Combine and sauté OO and onions until tender on low heat
2. Combine
3. sweet italian sausage decased and crumbled, the more crumble the better
4. 8.5 lbs ground beef, once again, the more crumble, the better
5. Brown ground meat and sausage on medium heat
6. This will take awhile, probably about 30-45 minutes.
7. Spoon out fat as it rises to the top.
8. Browning 11.5lbs of meat is tiring and hard work for a lazy bastard like me but stick with it.
9. When well browned spoon out extra fat by tilting pot.
10. Mmmmm now that is a lot of fat. While I’m sure you would like to consume the fat chill it until it is solid in a container you are OK with losing then toss it later.
11. Since I’m sure you fail go ahead and break up all chunks of meat again. Big chunks won’t get seasoned correctly and will make someone feel like they are chewing on a burger instead of chili.
12. Add 32oz fat free/low fat beef broth
13. Add 4 * 28oz cans of italian plum tomatoes. I don’t like tomatoes unless you beat the shit out of them; I slightly diced my tomatoes.
14. Add 2 * 12oz cans of tomato paste
15. Add 1 jalapeno sliced with seeds (if you’re going to use cayenne wait until the second drop)
16. Simmer for 15 minutes and stir regularly
Drop 1:
1. Combine
2. 1 Tablespoon of onion powder
3. 3 cloves of chopped garlic
4. 2.5oz plain chili powder
5. 1 bay leaf
6. 2 tablespoons salt
7. 2 tablespoons oregano
8. 1/2 cup red cooking wine
9. Simmer 1 hour
Drop 2:
1. Combine
2. 1oz light chili mexican chili powder
3. 2oz cuminseed
4. 1.5 tablespoons black pepper
5. 1 tablespoon whitepepper
6. (?) cayenne pepper (?)
7. 2pk sazon goya
8. 3 tablespoons brown sugar
9. 1/4 cup fresh dill chopped
10. 1/4 cup fresh parsley
11. 1 16oz cans of dark kidney beans drained
12. 1 16oz can of black beans drained
13. 1/4 cup lemon juice
14. 1/2 cup red cooking wine
15. simmer 30 min
Drop 3:
1. Combine (stir in between each addition and taste)
2. 2oz chili powder (to taste)
3. 1 oz cumin (to taste)
4. Salt (to taste)
5. simmer 15 min
Serve however you want it.
